How to Create a Chocolate Covered Cheesecake

Our classic Quick Cheesecake recipe has stood the test of time! It is one of our favorite ways to serve a Sweet Cheeseball & Dessert Mix. The directions are right on the box. One of the most delicious ways to change up this long-time favorite is to experiment with a different type of crust and even adding a fudgy topping! Follow along as we show you how easy it is to make an extra special Chocolate Covered Quick Cheesecake.

Chocolate cookie crust

The first step in making a “Chocolate Covered” Cheesecake is the crust. It is easy to find a chocolate cookie crust at the store or follow your favorite graham cracker crust recipe replacing the graham with chocolate wafer cookies.

Quick Cheesecake

Next, whip up your favorite Sweet Wind & Willow Cheeseball & Dessert Mix using the Quick Cheesecake directions on the back of the box. This recipe would work great with Chocolate Chip, Chocolate Covered Strawberry, Turtle Cheesecake, White Chocolate Amaretto, or Chocolate Covered Strawberry. Fill your chocolate crust with the whipped topping and cream cheese mixture and smooth out the top. Refrigerate while you work on your next step.

Ganache

Ganache sounds so fancy that you would think it is hard to make, but it is just two ingredients heated up over the stove together! Simply place 8 oz of semi-sweet chocolate in a heat proof bowl and pour 1 cup of warm heavy cream over the top (it should be steaming but not boiling). Allow these ingredients to sit in the bowl for 1-2 minutes before stirring to combine. This should create a thick chocolate sauce. Once it has cooled slightly, pour it over your fully set cheesecake.

Another option is to cover the top in ice cream shell topping. This will create more of a hard layer instead of the fudgy ganache topping, but would also look beautiful and taste delicious! In either case, it is best to sprinkle your included topping packet over the chocolate before it fully sets up so that it sticks to it.

The perfect dessert for Halloween is one that doubles as spooky décor for the table. We have gathered some scary good recipes to wow your guests this halloween.

Cheeseball Spider

Making this spooky little spider is quick, easy, and sure to impress. We whipped up a double batch of Chocolate Chip Cheeseball to make a bigger spider, but one would do just fine for a smaller crowd. Place about 1/3 of the prepared mix in plastic wrap and 2/3 of the mix in a separate sheet of wrap. Refrigerate while you gather the rest of your ingredients.

You will need black licorice, red fruit leather, and candy eyes. Cut the fruit leather into an hourglass shape to resemble a black widow’s marking. Then, cut 8 pieces of licorice to appropriate length for spider legs (we used the excess to make pinchers). Once your two cheeseballs have become firm in the refrigerator, roll each in the included cookie topping.

Now it is time for assembly! Place the two cheeseballs side by side. The larger will be the body and the smaller will be the head. Insert 4 strips of licorice on each side of the body as legs; place fruit leather in the center of the body; position the two candy eyes on the front of the head (and pinchers below if using). Serve up our creepy crawly friend with cookies and fruit for everyone to enjoy!

These tasty little smiles only take a few ingredients to make. Slice up apples, prepare your favorite sweet cheeseball (we love pumpkin for the fall vibes and contrast in color), and gather a few marshmallows. To assemble, spread the prepared cheeseball on one side of each of the apple slices. Then, place mini marshmallows between two apple slices as the teeth.

Everything Bagel Bombs

Served as a quick breakfast, an easy afterschool snack, or a fun appetizer, our everything bagel bombs are delicious any time of day! They are super easy and only require 4 ingredients. Let’s jump right in to the recipe!

First, combine Everything Bagel Appetizer Mix (reserve topping for later) with 8 0unces of cream cheese, and set aside.

Next, prep your biscuit dough. Each Bagel Bomb will take 1 regular sized refrigerated biscuit or half of a jumbo sized biscuit. (This recipe calls for 15 regular or about 8 jumbo biscuits). Gently roll or press the dough into a flat round disk.

Then, place a tablespoon of your cream cheese mixture into the center of each flattened biscuit. Gently gather the biscuit dough around the cream cheese, making sure to press the dough together to seal.

After forming each ball of dough, coat the top with an egg wash (1 egg + 1 Tbs water beaten). This step will make sure the topping sticks and ensure a beautiful golden brown bagel bomb! Sprinkle the top of your bagel bombs with the everything bagel topping packet.

Lastly, bake or air fry the bagel bombs (careful not to overcrowd as they will expand) at 380 degrees for 8 to 11 minutes or until the outside is crispy and golden brown, and the dough on the inside is completely cooked through.

These jewels are super savory, crunchy on the outside, ooey-gooey on the inside, and a total crowd pleaser! Bagel Bombs are the perfect addition to your brunch spread or a super fun appetizer for game day!
